Rainbow Connection

Last week I made a batch of rainbow cupcakes for a sweet little friend of Veronica's. We had a surprise birthday celebration. She wasn't expecting it and her mom said she was truly blessed.


I was inspired by this rainbow cake featured on Martha Stewart, but opted for the lazy man's version (which was a boxed cake mix).


I took the batter and divided it into six ramekins and then added gel food coloring. The colors were really vibrant. Then I began to layer each color in the muffin tins in this order: purple-blue-green-red-orange-yellow. And if you're a great baker like me and burn the bottoms, you get an added color, brown!











After they baked for 20 or so minutes, they came out looking like this. So much food coloring it tie-dyed the white cupcake paper.




I then whipped up some marshmallow frosting and voila, the finished cupcake.

Very nice. Brave woman going the extra mile instead of plan ol' cupcakes. I'm sure the kids get a kick out of it when they take a bite and see all the colors.
